Description:
Drupal's admin UI includes a report at admin/reports/status/php which shows the output of phpinfo(). The full output can contain sensitive information so by default Drupal removes some sections.
This behaviour can be configured by setting the $settings['sa_core_2023_004_phpinfo_flags'] in settings.php to a different value corresponding to the flags parameter of phpinfo().
See https://www.php.net/manual/function.phpinfo.php for available constants and how to combine them with the bitwise operator.
If you need to expose more information in the report - for example to debug a problem - consider doing so temporarily.
Impacts:
Site builders, administrators, editors

What's the default?
It doesn't seem to be -1 (INFO_ALL) for Drupal, like stated in the link about PHP
I believe the default
I believe the default excludes INFO_ENVIRONMENT and INFO_VARIABLES
