Problem/Motivation

I was working on #3121204: Add ability to choose the operator when performing an entity lookup and noticed that entity_lookup process plugin supports config entities.
However, there is no test coverage so I suggest adding a dedicated test just to be safe when applying other changes.

Proposed resolution

Add a test with config entity lookup.

I think extra test coverage won't hurt. Merged to 8.x-5.x and 6.0.x.
