I can follow the documentation pages...

But when I want to find them I don't know where to look them up.

The "Starred" page only displays favorited project pages (modules, themes, etc):
https://www.drupal.org/user/{UID}/starred

Is there a page I can see all the pages I'm following?

At least the issues you are following can be found in the block "Your issues" that is (or may be placed) on your dashboard.

As the dashboard can be customized, I'm not sure if this block appears by default - but that is where they should be.

However. I do not think followed documentation pages appear in that block. Maybe somebody else know more.

I have noticed that, the documentations marked as "following" does not show up under the user profile.
Rather, whenever there is a change in the documentation, that is marked as "following"; an email notification is sent to the user and this notification can be managed at https://www.drupal.org/user/{UID}/message-follow.

After your feedback I dug up this a bit further, and after going through a few paginated pages, I noticed the Documentation pages are listed along with "my other posts" at https://www.drupal.org/user/{UID}/track

I wish the track page had a set of filters that we could use, similar to the Issues. I believe it could also help to see what type of content can be found on that list.

@osman Yes, the tracker page shows all the pages you are following, including the issues. When a new comment is posted on an issue, or the documentation page is edited, you will see them bumping on the tracker page. This is also true when a new comment is posted in the discussion page associated to documentation pages.

As for filters in the tracker pages, that is a feature request that eventually should be posted for the module used on Drupal.org for the tracker pages.
Even if Drupal.org is using the Drupal core module for the tracker pages, I am sure there is a custom module handling the documentation pages you follow. Adding a filter to the tracker pages could be a feature they could be willing to add. (Maybe the community can help with that, if they think it's worth adding the feature.)
