Registrant Settings needs a label field so there's something to display when referencing Registrants. This should be an entity reference field which gives the option to choose any of the fields within the Registrant Settings entity to give the flexibility of Recurring Events even more power.
Here's a screenshot of a use case example where the registrants are site 'User' entity reference fields and that 'User' reference field would be chosen/referenced as the label field in the Registrant Settings entity. As you can see the list items are blank because there's no label to display.

owenbush commentedAttached is a patch which allows you to specify (using tokens) what the label for registrants should be. This is configurable in the registrant settings under Structure > Events > Registrant Settings. It defaults to: [registrant:email]
Out of the box only a few fields are supported with tokens, but if you install the token module it should expose all fields.
You will need to run database updates to get this to work.
