Whenever I delete a field in commerce, I receive the following error message :

Drupal\Component\Plugin\Exception\PluginNotFoundException : The "commerce_wishlist" entity type does not exist. dans Drupal\Core\Entity\EntityTypeManager->getDefinition() (ligne 133 de /home/www.domaine.com/public_html/web/core/lib/Drupal/Core/Entity/EntityTypeMa...).

How to correct this ? Thank you

No clue. This is one of those magical Drupal core errors that I've never understood (and was never able to reproduce). You could try asking in the Drupal core issue queue, otherwise you'll have to chase it yourself.

Several months ago, I uninstalled this module https://www.drupal.org/project/commerce_wishlist do you think this is the problem ? or is it the drupal core ?

Yes, it's a leftover from the wishlist uninstall most likely.
