I would like theming my newsletter with simplenews on drupal 7 but I don't understand what I do.
I know theming on drupal 6 but it seems really different.
Please help me,

Not sure what you are missing. Theming hasn't changed that much, at least not for templates.

Did you read the README.txt provided with the module?
