When I select this option, and then click "Update translations", the "Update mode" setting reverts back to "All existing translations are kept".

I assume you make this selection on the update page and not on the admin config page. This behavior is by design. We could do better in explain it as being a one time override. Or better, remove this all together.

Ah, now I know what you mean. I didn't even realize that there was a tab for this over at the Languages admin section which properly saves settings.

It's probably simplest to remove it altogether. (I don't think anyone else is doing this anywhere.) However, if there's a compelling reason to keep it, have an explanation and a link to the other page. (I know there's a link to it above, but the link needs to be in the explanation for this to be really clear.)

For example:

One-time update mode (The selection here will temporarily override permanent settings configured on the Update settings page.)

...where Update settings page is a link to it.
