I am trying to add a display with different sorting.

When I create a Display/Page it inherits the sorting of Default. If I remove/add a sorting criteria on the newly created Page it updates the default display and viceversa. In the mean time I am not clicking on "Update Default Display"

Is this how views built or I am missing something?

You must click the override button. Note that this will override all sorts as a group. (This is true of fields, filters,arguments and relationships as well).

You can click on the word 'sorts' and get to an override button, btw, or go to any sort criteria and use that override button.
