I'm hoping views will be able to output the number of child pages a particular book page has and sort by the latest posted child page.

AFAIK neither of these fields are yet available in Views 2.

I'm not sure if this issue is supposed to keep track of extending support for the book module in general, or just the two features requested in the original post. The title seems to refer in general to increased book module support. So I thought I'd comment here that I've added another book feature request here: #1524600: Default argument for "book root of current node".
