Ok, so I have the function in my template.php to theme the field, but I'm not sure exactly how to do it. I would like the text "audio " and video" at the top of the table on http://www.lewisburgumc.org/sermons/2008 to instead be themed as 2 different pictures.

I'm not even sure if I'm going about this the right way. Basically I have a bunch of sermons on the page, every now and then there will be one that is missing an audio or video part to the sermon. I would like to be able to let the users know if each sermon has audio or video with a simple little image that I will create for each.

I thought maybe I could have an if statement that checks to see if "audio" or "video" is in the field and then display the correct image instead of the text. If this was VB or Java, I wouldn't have a problem, but when it comes to web languages like php, my skills are limited at this point. The audio and video can even be in separate fields if that makes it easier. I really just need a boolean value for each that if true displays a certain image, and displays a different image when false.....

maybe you can try to use jQuery to substitute the audio and video string with an image.

Sorry, unfortunately this support request is way too specific. Please have a look at the issue queue - Views maintainers are buried already. You might want to try to get further support at http://drupal.org/support. Additionally, the answer to your question might be covered in the handbooks at http://drupal.org/handbook/modules/views already.
If you were able to solve this issue on your own in the meantime, you might want to add the involved steps to this closed issue, so other users searching for a similar solution might find it.
