As a feature, I would love to see the use of the operator 'contains' expanded. I would like to use it for an entity reference field.

An entity reference field, when used as a filter, is merely an ID. My guess is that what you really want is to add a relationship on the entity reference and then filter on fields from the referenced entity, using the relationship.
