I have this working great with users subscribing to category terms. Would it be possible to set it up to allow them to subscribe to keywords that they make up themselves? Thanks.

You mean arbitrary words that show up in the title or body text (or other text fields)?

No, there's no such feature at this point. This could be a nice idea for an add-on module, but I'm afraid it wouldn't scale well, which means it would probably have to remain a separate module.
