I would really love to implement this module but am wondering if I install 5.1.9 on the production site, if I will have issues when the new version comes out.

1.9 is known to be buggy and is unsupported.

2.0-beta is beta and as such not released for production use.

If I were forced to choose between the two, I'd read up on the open issues and pick the latter...

No, there are no known issues when upgrading from 1.9 to 2.0, but downgrade without losing subscriptions data is difficult.

Yes, all information is migrated, when you upgrade from 1.9 to 2.0.
