Can no longer reference roles after Drupal core update to 7.59

Hi,
We upgraded Drupal core to 7.59 after which a few things broke on the site. The issue at hand is that when I try associate a role with a product I get the following message: "There is data for this field in the database. The field settings can no longer be changed."

You will notice the check boxes are grayed out. I need to be able to add new roles to be referenced by a specific product type and I can no longer do that.

Any ideas on how to fix?
