I have my profile configured on a dev site, and i'm looking for an easy way to migrate the structure and data to my live site. If I have to do it manually via phpmyadmin, it looks like I need to copy some rows from field_config, field_config_instance, as well as the tables created for the fields I need.

Can someone confirm this or point me in the right direction?

This is the same problem as with node types and fields on those, or indeed any Drupal entity.

The answer is complex; I would google this and read blog posts about it. The short version is either a) you can't, b) do a complete DB dump, c) use Features module if it's ready for D7, d) replicate it all by hand. Copying raw tables is most probably the worst option of the lot.
