Does OpenPackage Video support drupal's Taxonomy? I cant find any documentation regarding whether taxonomy is supported or not. Thanks.

Of course!

The way Drupal works is that every item of content is a node. OpenPackage Video allows video to be in nodes. Taxonomy classifies nodes.
