I tried upgrading and then downgrading, but the userreference fields are gone for normal users under both circumstances. Does this mean I have to remake the node types?

I don't really know what you mean. You might have to resave the config page for the userreference fields?

Hey mate, is it possibly a user permission, template, or 'display fields' problem ?
