This is an incompatibility bug.

To fix:
change the following line in matrix.install (line 86):

      'value' => array(
        'description' => t('Number of rows?'),
        'type' => 'text',
        'not null' => TRUE,
        'default' => ''),
      ),

to:

      'value' => array(
        'description' => t('Number of rows?'),
        'type' => 'text',
        'not null' => TRUE),
      ),

I experienced this problem also.
It has been categorised as normal but for someone new to Drupal it can be a show stopper, unless they are happy to modify the installation scripts. Many will not.

Nimi's change will fix this problem but there are some conditions.....

If users do come up with this problem and they modify the installation script as suggested by nimi then be aware that unchecking the Matrix Field module checkbox, correcting the install script and then rechecking the Matrix Field module checkbox does not appear to solve the problem. The install process seems to only make one attempt to create the node_field_matrix_data table. It seems either you need to reinstall drupal with a corrected Matrix Field script, or manually create the table using the corrected create script as per nimi's instructions. (btw don't forget to also remove the final comma immediately before the final closing bracket.
