I took the D7 git version and tried a matrix (custom). Upon submitting an Add Content form, I get a single error that just says "field_cardinality" and each matrix field gets a red validation outline, so I can't even get the form to save.

The matrix (textfield) type worked okay.

I reinstalled and it all appears to be working now.

I found out it was really because the "Number of values" needs to be set to "unlimited" - by default it had set to "1"

The D7 version of this module should always have it set to unlimited. I'm surprised that you ended up with at 1. It's supposed to hide that field from the UI, as it makes no sense to have it there, but upon save set it to unlimited.
