I would like to have multiple instances (multiple rows) of a matrix field; so I checked 'Multiple values' check box, but when editing the content I still get only one row. I know I can set multiple rows, inserting multiple labels, but this way I have a fixed number of rows, while I would like to be able to have as many rows I need, and only when I need them...

It sounds like Tablemanager module might help you if I understand you correctly. It allows you to add new rows from the front end. However, I'm not sure if it's ported to 5.0 yet.
