There's a checkbox to hide every other field except the long/lat (geo) fields in displaying the location.

The checkbox for hiding the country isn't working for me either. The other checkboxes appear to be working.

Fixed in HEAD and DRUPAL-5--3.

(You'll have to hide 'Country name' as well as 'country' -- hiding virtual fields wasn't possible until recently...)
