Change some of the field titles

I would like change some the titles in the invoice during the creation of the invoice and in the final display.

Quantity to Hours
Unit cost to Hourly Cost
VAT to tax
county to State

Where in the code do I look and make these changes. I tried looking thru but have not found exactly where I can change just the labels.
