No ability to disable post display information on specific content types in theme configuration UI. Thus the date can't be disabled on content types where it doesn't fit or isn't used, ie: a gallery of images view and the like.

In order to display post-time display information per node type, you could add a simple if scenario in node.tpl.php and exclude your desired node types

<?php if ($node->type!='page'): ?>

<div class="post-time">
<b><?php print format_date($node->created, 'custom', "j"); ?></b>
<div><?php print format_date($node->created, 'custom', "M"); ?>
<?php print format_date($node->created, 'custom', " Y"); ?></div>
</div>

<?php endif; ?>

Can this be done using themes configuration UI instead of hard-code?

Yes, you can also you make the following change in node.tpl.php

<?php if ($submitted): ?>
<div class="post-time">
<b><?php print format_date($node->created, 'custom', "j"); ?></b>
<div><?php print format_date($node->created, 'custom', "M"); ?><?php print format_date($node->created, 'custom', " Y"); ?></div>
</div>
<?php endif; ?>

This behavior per content type controled by $submitted variable. I have attached the appropriate patchThemeConf20110111.txt file.
