is there a way to have an imagecache for the default image that is different from what I might set for an imagefield is an image is uploaded?

The default image and normally uploaded images always run through the same formatter. You could use the theme layer to change this behavior (override theme_imagecache_formatter_default), but coding/theming support is out of scope for the ImageField queue.
