I was wondering if it's possible to allow only authenticated users to upload files, and how this would be done? I can't see reference to this anywhere.

You could use content permissions (part of CCK) or field permission (contributed module). I prefer the later since it lets you pick which access control is enabled per field (it defaults to none)
