When module "Override node options" was activated, the "Image Picker" field, in node edition form, was blank, as "File Picker" fields. Both override the fields of the Node.

I don't know the "Override node options" or the "Publish Content" modules and will have a look. In the meantime try flushing the caches.

I set up a fresh copy of drupal-7.8, installed Imagepicker, created a user, set up permissions for the user, logged in as that user and created a page with an imagepicker image inserted. Imagepicker Iframe visible and working.
I then installed the "Override node options" module and looked to see what had happened to the Imagepicker Iframe, both as user and as admin, in both cases the Imagepicker Iframe is there and working. I then allowed the ordinary user to publish/unpublish and checked again, Imagepicker is still there.
This was all done using the default theme and using 'basic page'.

So I cannot reproduce this bug.
