To make the toggle more easy on small device, I think it would be useful to place the - and + image before and after the input field.

I think from a usability standpoint that's actually a really good point. Also, in terms of mobile friendly it could be interesting to check out other options.

For example I was thinking this might be a good option https://github.com/AanZee/input-stepper

If you are happy to integrate that I could write a patch?

Yes, this would be great to have addressed somehow. The tiny triangles are hard to click on touch devices.
