Just to clarify:
You defined a mapping, that
foo -> node field1
bar -> node field2
node field1 is requried, it remains empty, node field2 isn't required and the mapper fills it nicely, right?

My issue is that all defaults in my node are unset whether content taxonomy or text or other

i have a content taxonomy field called gender in my node
gender is required
gender default is set to "all" in my content type
since feedapi_mapper does not take content taxonomy, I placed my gender taxonomy on my feed type and set it to "all"
i then execute the feed

so all the required fields whether content taxonomy, text, etc in my content type that the feeds create no longer have a default value in it.

also the gender content taxonomy is unset, but the taxonomy term is set.

It's not FeedAPI Mapper's fault.
I tested the problem and I can confirm that it exists.
