Add note categorization

My team was discussing the idea of being able to tag a note from a select list of categories. From what I can tell, I think the api is only for adjusting the rendering of the display of the note, not for adding to the note form, like a hook_form_alter.

We really appreciate using this module, but our discussion got us wondering if this is a possibility.
