It would be nice if Drupal stored all outgoing emails in a Sent Items list so administrator can see all email activity, the problem is there no way of knowing exactly whats getting sent out.
Does anyone know of a modules that does something like this. Personally i think this should be part of the Drupal core.

dawehneri don't think this should be part of core, because its to specific feature.
But its easy to write a module which does this for you using hook_mail_alter

peter panes commentedI don't think it is a specific feature, all Drupal installations send out emails from core but stores no record of this activity, i think its should come under the core reports as a module that is easily turned on, and i'm surprised no one else is interested to see the outgoing email activity from their websites.
I don't have much time right now but its definitely going on my to-do list.

mdupontUnlikely to go into core. The contrib module at http://drupal.org/project/mail_logger does that though. A similar feature could be added to log outgoing messages in watchdog. Currently, only errors sending mail are logged, so logging any outgoing message was considered as unnecessary.
