Steps to reproduce:

  1. Create media field
  2. Configure some media type, for example 'Video'
  3. Delete this media type on admin/structure/media

Now you obviously have to go back to configure another media type for the media field. Do so:

  1. Go back to the field settings page, e.g. admin/structure/types/manage/article/fields/node.article.field_media
  2. Check another media type, for example 'Image'
  3. Hit "save settings".

Result:

Error: Call to a member function uuid() on null in Drupal\Core\Field\EntityReferenceFieldItemList->defaultValuesFormSubmit() (line 126 of core/lib/Drupal/Core/Field/EntityReferenceFieldItemList.php).

There doesn't seem to be any workaround except to delete the whole field and start afresh, so major.

Tested this as well against HEAD of 8.8.x and was unable to reproduce this problem either.

Given that me and @KittenDestroyer had the same experience, I think we can close this one as not reproducible. If it arises again, feel free to reopen this issue. :)
