I'd love to be able to give my users the permission to change the sitwide email-address, while restricting them from changin, say, the front page.

Is it possible to add finegrained permission control for Site Information?

This module hasn't gone down to field level, and I don't have any plans on doing so.

Probably the best case for this situation would be to write a module which alters the #access parameter for the fields you want to hide.
