I am the guilty party, but it seems to me like the half-done support for commerce_migrate_uc_file_s3 just needs to be moved into a subclass *in that module*. Looks like this was all experimental and never got sorted out.

This has been removed in the 2.x branch since it is possible to configure additional fields using the UI now, as explained in #2004570: Not all Ubercart stores have product images....

The change happened as part of upgrading the module to support the new API in migrate versions 2.5+. See #1832736: Class registration for Migrate 2.5 or later for complete details.
