I also fell in the pithole of no return: assuming that I could use the demo store as a basis for further development.
While trying to change or delete the product types, I learned that this was not possible.
On the front page of the Drupal commerce kickstart project, there is one sentence:
"Please note that the "demo store" has been built to demonstrate the capabilities of Kickstart and shouldn't be used when starting new sites."
I think that that sentence needs to have the word "WARNING!" in front of it, and should include some additional explanation why the demo store shouldnt be used when starting new sites. Something like:
The demo store uses features in order to create content, and the content/product types cannot be deleted, nor can the machine names of content types be changed.

Yuri commentedAlso, during the installation the option is preselected to install the demo store, without any warning that the demo content cannot be changed or removed. This will cost people a lot of days to re-install the site if they find out afterwards.
