Default "from" address to an existing email [#3572135]

It shouldn't be necessary to manually set the "from" address on each new email.

The add-email form should default to either the site's email address or maybe the (default? first?) store's email address.

Work out what to use as the default.
Set the default on the add-email form.

The add-email form never loads with a blank "from" address.
