The Chosen js library currently defaults to the placeholders "Select an Option" for single selection widgets or "Select Some Options" for multi-selection widgets, however these can be overwritten with some js. Attached patch allows you to configure these placeholders from the Chosen module administration.

Oh man, my original patch introduced a really dumb bug. Rerolled to fix it.
