I think that the possibility to filter more than one Node Reference field would be a good feature

I'm not sure I understand what you're request is.
To take your screenshot as an example. After selecting, say, "Who is Karl?" on one of the drop-downs, saving and editing again I would expect all three drop-downs to show the original options minus "Who is Karl?", because once selected by any node on your system, it will be removed from the pool of selectable options. So before and after saving all three drop-downs will always show the same, reduced set.
That's the intended functionality. How does this differ from what you are after?
