Would it be possible to make it so that a user can only select one time slot?

I'm not sufficiently good at coding to do this, but it seems there could be two approaches:

1. use javascript to simply pop-up a message informing the user that they can only select one option/time slot
2. use the forms api to validate on submission and return the appropriate error message, highlighting the offending selection(s)

The other addition, would be some further configuration options so that you could say whether this was a 'restricted' field or not.

Is this possible? Could anyone help me to do this? I'm willing to try to hack on the code, but would need some advice/direction.
