how complicated could be to make an option to send an email to an admin address when something is waiting for approval?

I think such a feature could be great when one have several web sites to monitor for new comments and nodes in need for moderation...

I recommend you take a look at the Workflow and Actions modules. I believe you can use them to set up this feature, and do a lot more cool stuff.
