I've created a new webform. For each form component I have to insert the checkbox under the advanced settings "insert into e-mails" clicked. If I save the webform and I look at this setting it is no longer there. Only one value is sent in the e-mail, which is an input field with an e-mail address. I would like to be as it will send all the entries in the e-mail, but that's not possible.

I'm not following the problem in this issue. By default, Webform will send all component values out in all the e-mails. Instead of going into the "Advance settings" you can also just check the "E-mail" columns of checkboxes when viewing all the components, which does the same thing. You should double-check your theming also, try switching themes and see if the e-mails start working again properly.
