I have a few large flv files that are already on the server. Is there a way to add them to a node without using the video upload during node creation

As the name suggests the Dash Media Player is a player not a media storage module. You should take a look at modules like
http://drupal.org/project/media_mover
http://drupal.org/project/media (which is not ready yet but will do all things you need)

Hope that helps.
