ability to set user as email recipient in webform setup

I'm using the webform module as a way for students to submit short answer assignments. I would like to be able to configure it so that the form I create not only takes the user's email for the "from" but also the "to" address. Then, when the student submits the form, the results will be sent to the student's email, giving them a record of their answers.

The ideal would be that the "Email to" address would be a drop-down, like the "Email from" and subject choices.
