Install the Captcha 2.x module. Then you can add a captcha to any form in Drupal, including individual webforms.

It works the same as every other captcha. Visit admin/settings/captcha, and turn on the Administrative Captcha Form (or something like that). This makes it so when viewing any form in Drupal you can add a captcha. There will be a collapsed fieldset at the bottom of every form. Expand it and say "Add a captcha to this form".
