I've got several form components set up (textfield, textfield, select, textarea) but in the "Webform mail settings", for "Email from address" I can only select the "select" type. In the other option ("Subject" or "Email from name") I can choose any component, as described in the help text?

ok - you should clarify the help text that NOT ALL fields are allowed, but only email or select and so on!

From the field description:

After adding components to this form any email, select, or hidden form element may be selected as the sender's name for e-mails.

Status: Fixed » Closed (fixed)
