Now that we have library + chart type options, we can add more features that aren't shared across all libraries or types. Stack labels, which work for bar and column charts (https://api.highcharts.com/highcharts/yAxis.stackLabels) are a nice feature.

This was my third time making use of the library_type_options, and I realized that the initial implementation--though working--was a little clunky. This refactoring (plus the addition of the stackLabels) tightens things up a bit.
