Change default widget and formatter

Problem/Motivation

With the introduction of seasons and exception days in the office_hours module, also a new widget is introduced, supporting those.

It is time to make that new widget "Office hours (week) with exceptions and seasons"the default one, instead fo the old "Office hours (week)" widget, which does not support both options.

Also, let us change the default formatter from basic 'plain text' to 'table'.

Steps to reproduce

When installing the module, one ot the other widget is initially configured in 'Manage form display' settings
