How do you override inherited tags with blank/empty values?

Here's my specific scenario:

1. Setting basic, advanced & schema.organization tags globally.
2. Taxonomy Term entity inherits global values (expected & desired behavior).
3. Add settings for a specific taxonomy that I would like to override a few Schema.organization tags with empty values (Not, I do not want to remove ALL Schema.organization tags, just a couple.)

It seems there is no way to do this using the UI. If not, what's the recommended way to do this?

We also have this issue, for the canonical URL. We have one page where we'd like to remove it. Wouldn't make sense to remove it on the entire site, and we're trying to remove it without code, since it would be linked to the node ID otherwise.
