Installed the latest version of the module and all dependencies, but get this error when trying to authenticate against Salesforce. This error appears when Salesforce redirects back to Drupal for token storage.

Sounds like you're missing your composer dependencies, namely lusitanian/oauth

If you're not using a composer-based build, you'll need to ensure all your root composer.json requirements includes those of salesforce and its submodules.

We used composer to install the dependencies and three of us had a go separately with no success. Will try again. Which is the recommended version of the D8 suite? Thanks much!

If you're not having luck with 8.x-3.1, I'd recommend 8.x-3.x-dev
There will be an 8.x-3.2 release soon to keep an eye out for

It does appear this was a dependency issue and thank you for clarifying. We also found a ddev environment issue that confused matters. Getting past that, do you recommend 8.x-3.x-dev or 8.x-3.1? Thanks for your quick responses!

Generally 3.x-dev will be pretty stable, but probably go with 3.1 if you don't have a compelling reason to run dev
