The GdprSanitize class, used by the drush gdpr-sanitize command, doesn't do anything, because it's still using the gdprOptions property, which was replaced in commit cdc3c4 when the config options were split apart. It needs to be updated to use tablesToAnonymize. Patch on the way :-)
