I'm trying to use values i profile fields as contextual filters in building a view. However, they don't seem to be available like fields in other content types.

It could be a number of reasons, especially with Views. There might be a missing relationship or Views is not aware the route parameter is a Profile. I would suggest https://drupal.stackexchange.com/ for these kinds of support requests.
